Felicity Cloake’s hot cross buns recipe

Felicity Cloake’s step-by-step approach to the quintessential Easter treat

fun of making your own. They may take some time to prep but are all part of the pre-Easter ritual.
Prep 3 hr
Bake 25 min
Makes 16
200ml milk, plus a little extra for glazing
3 cardamom pods
1 cinnamon stick
2 cloves
¼ tsp grated nutmeg
1 pinch saffron
450g strong white flour
7g sachet fast-action yeast
100g cold butter
50g golden caster sugar, plus 1 tbsp extra for the syrup
½ tsp salt
½ tsp ground ginger
3 eggs
150g currants
50g mixed peel
3 tbsp plain flour

1 Infuse the milk

Pour the milk into a small pan. Squash the cardamom pods with the back of a knife, then add to the milk with the cinnamon, cloves, nutmeg and saffron. Heat gently to a simmer, then take the pan off the heat and leave the milk to infuse for an hour.

Infuse the milk.

3 Make the dough

Lightly beat two of the eggs, then pour these into the well with the milk. Stir together to make a soft, sticky dough, then tip out on to a very lightly floured surface and knead for about 10 minutes, until smooth and springy to the touch (if you have a food mixer, feel free to use that to make life easier).

4 Prove the dough

Grease a large bowl and put the dough in it. Cover loosely and leave somewhere draught-free, and preferably fairly warm if you’re in a hurry, until it has roughly doubled in size: this should take about two hours in your average kitchen. Meanwhile, line two baking sheets with greaseproof paper.

5 Add the fruit

Tip the risen dough on to a lightly greased work surface and knead again for a minute or so, just to knock out the air. Roughly flatten it out, then scatter over the currants and peel (for classic buns), or whatever mix of dried fruit, nuts or sweets you fancy (see step 9 for ideas). Knead the dough again, to distribute the fruit evenly.

Knead and knock back the dough.

6 Form the buns

Divide the dough into 16 equal pieces (a decent pair of scales will make this much easier), form into balls and arrange on the lined baking sheets. Score a cross in the top of each one, then cover loosely and put in a warm place to prove for about an hour. Towards the end of this time, heat the oven to 200C/390F/gas 6.

7 The finishing touches

Mix the plain flour with a pinch of salt and just enough water to make a stiff paste. Beat the remaining egg with a dash of milk. Brush the top of each bun with the egg-and-milk mixture, then pipe (or use a teaspoon to drop) lines of the paste over the cross scored on to each bun.

Form the buns, score crosses on top, pipe flour paste in to the crosses.

Form the buns, score crosses on top, pipe flour paste in to the crosses.

8 Bake the buns

Bake the buns for about 25 minutes, until golden. Meanwhile, mix a tablespoon of caster sugar with a tablespoon of boiling water, to make a syrup. When the buns come out of the oven, paint the tops with the glaze, then transfer to a rack to cool to room temperature before eating.

9 Variations

As long as you stick to the same proportions, you can put just about anything in a hot cross bun. Chocolate chips or toffee pieces tend to be especially popular with children (well, obvs), but dried apricots, cherries, cranberries, figs, crystallised ginger and chopped nuts also work well in place of the traditional vine fruit and peel combination.

How to prepare Seared Steak

Reverse-Seared Steak Time 45 to 55 minutes, plus lighting the grill Reverse-searing is a grilling technique for steak that ensures a dark, sizzling crust and a rosy center that is perfectly cooked to your desired degree of doneness. This brilliant grilling method combines the low and slow cooking of traditional barbecue with the high heat charring practiced at steakhouses. Though it works well with any thick steak, from picanha to porterhouse, this recipe calls for a cut of steak popularized in Santa Maria, Calif., and is today known and loved across the U.S. as tri-tip. As the name suggests, it’s a triangular or boomerang-shaped steak cut from the tip of the sirloin, blessed with a robust beefy flavor. INGREDIENTS Yield : 4 servings * 1large or 2 small wood chunks (such as oak, hickory or mesquite) or 1½ cups wood chips * Canola oil, for greasing the grill grate * 1tri-tip steak (about 2 to 2¼ pounds; see Tip) * Coarse kosher or sea salt * Freshly ground black pep...

Bannon to address Front National as French far-right leaders seek unity

Bannon to address Front National as French far-right leaders seek unity Beset by political and personal rifts, and with her popularity in the post-election doldrums, Le Pen is facing opposition to her plan to rename the party in an attempt to improve its electoral chances. presidential election. Hours before the conference opened it was revealed Donald Trump’s former adviser  Steve Bannon  would be speaking on the first day of the event. The move is seen by the traditional wing of the FN, founded by Le Pen’s father in the 1970s, as a betrayal of the party’s heritage. The new name will be voted on after it is unveiled on Sunday. The surprise guest speaker Bannon was announced on Twitter by the FN deputy president Louis Aliot. He wrote: “Welcome to Steve Bannon who will address the FN tomorrow at our congress and will meet ML [Le Pen]. The people are waking up and taking their destiny in hand.” Shortly afterwards Aliot tweeted a photograph of him sha...
