Reasons why you should love paprika

 Fries and  Rosemary-Paprika Chicken

Chicken and fries

This sheet-skillet chicken supper was roused by patatas bravas, the fresh potatoes normally presented with a hot sauce and aioli in tapas bars the whole way across Spain. Here, there are potatoes, obviously, however they're cut into matchsticks and cooked on a sheet dish; and there's a garlic mayonnaise for plunging. (Make genuine article aioli assuming you have a couple extra of moments.) But rather than the conventional smoky, block red sauce, comparable flavors are spread onto chicken prior to simmering: a blend of lemon, garlic, rosemary, smoked paprika and red-pepper chips. Involving bone-in parts keeps the white meat delicious, while the skin gets fresh and a portion of the schmaltz shines the fries.

RECIPES

  • ½ cup mayonnaise
  • 1 tablespoon lemon zest (from 1 large lemon)
  • 3 garlic cloves, grated
  •  Kosher salt (Diamond Crystal) and black pepper
  • 1 tablespoon smoked paprika
  • 1 teaspoon chopped rosemary leaves (or ½ teaspoon dried rosemary)
  • ½ teaspoon red-pepper flakes
  • 2 large bone-in, skin-on chicken breasts (1½ to 2 pounds total), patted dry
  • 1 large russet potato (about 1 pound), scrubbed
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
PREPARATIONS

STEP 1
    1. Heat the oven to 425 degrees, and place a sheet pan on the oven’s lowest rack to heat. In a liquid measuring cup or small bowl, stir together the mayonnaise, lemon zest and garlic. Season with salt and pepper.
    2. STEP 2
    3. Transfer half of the mayonnaise mixture (about ¼ cup) to a medium bowl. Stir in the smoked paprika, rosemary, red-pepper flakes and ½ teaspoon black pepper. Season the chicken all over with 1½ teaspoons salt. Add the chicken to the bowl of paprika-mayonnaise, and rub it all over the chicken. Set aside.
    4. STEP 3
    5. Halve the potato crosswise (no need to peel), then cut it into ¼-inch-thick fries. Right on the cutting board, drizzle with the olive oil, and season with salt and pepper. Toss to coat.
    6. STEP 4
    7. Place the chicken breasts skin side down on the heated sheet pan, then scatter the potatoes around the chicken in a single layer. Roast on the bottom rack for 15 minutes, then flip the chicken so the skin side is up. (No need to turn the potatoes.) Roast for another 10 to 15 minutes, until the fries are browned underneath and the chicken registers 155 degrees when an instant-read thermometer is inserted in the thickest part. (The temperature will rise as the meat rests.) Let the chicken rest for at least 5 minutes, then cut the chicken meat from the bones and slice. Stir the lemon juice into the remaining mayonnaise mixture. Eat the chicken with the fries and a puddle of the lemon-garlic mayo for dipping.

How To Cook Spaghetti and Chicken Meatball Soup

Spaghetti and Chicken Meatball Soup Yield: 4 servings Time: 30 minutes Tomato soup meets spaghetti and meatballs in this one-pot, 30-minute crowd-pleaser. To keep chicken meatballs juicy and light, skip the bread crumbs (which can create dense or bland meatballs) and the browning (which can cause precious juices to evaporate). Instead, plop them into the simmering soup to cook through. Any juices they do release will be captured in the tomato soup, which is creamy from olive oil and Parmesan. Feel free to adapt this recipe to suit your preferences: Add chopped onion, crushed fennel seeds, dried oregano or chopped parsley or basil to the meat or the sauce. The pasta will absorb the soup as it sits, so it’s a dish best eaten right when it’s made INGREDIENTS     1   pound ground chicken or turkey 1   cup finely grated Parmesan, plus more for serving 8   garlic cloves, coarsely chopped 1   large egg   Kosher salt (Diamond Crystal) ¼   cup extra-virgin...

How to Survive and Thrive in Nigeria’s Heat Waves

Nigeria is no stranger to heat waves, especially during the dry season. But did you know that these periods of extreme heat can affect not only your health, but also your economy and infrastructure? When the temperature rises above 40°C, it can be hard to keep cool and hydrated. This can cause serious health problems, such as dehydration, heat exhaustion, and heat stroke. These can be life-threatening, especially for children, the elderly, and those with chronic diseases. Heat waves can also damage your infrastructure, such as power grids, roads, and buildings. When everyone uses more air conditioning and cooling systems, the power demand goes up. This can lead to blackouts and brownouts, which can disrupt your businesses and services. It can also increase your costs, as you have to pay more for electricity and maintenance. So how can you cope with heat waves and reduce their impact? Here are some tips: Stay indoors during the hottest hours of the day, usually between 10 a.m. and 4 p.m...
